觀音山蔬食團主廚提供這道料多實在的『素香羹』,添加多種蔬菜及鮮菇增加鮮甜味,熬煮出食材的原味鮮甜,甘甜爽緻的滋味。

準備食材與佐料:(6人份)
乾香菇25g、大白菜半顆(約500g)、金針菇60g、黑木耳90g、香菜3支、素G丁60g、紅蘿蔔60g、素蠔油1大匙(20ml)、烏醋30ml、沙茶12g、味素適量、鹽適量、糖25g、地瓜粉40g、白胡椒粉適量。
素食料理簡單做,開始:
1. 乾香菇泡軟切絲;紅蘿蔔切絲;金針菇去底部(約3cm), 再對半切;黑木耳切細絲;素G丁切細片;香菜切末;大白菜洗淨切大塊,備用。
2. 地瓜粉加水拌勻,製成地瓜粉水,備用。
3. 用油熱鍋略炒香菇絲,轉小火放入紅蘿蔔、黑木耳絲、大白菜、素G丁、少許水,拌炒炒軟。
4. 加入素蠔油、烏醋、沙茶、味素、鹽、糖、地瓜粉、白胡椒粉調味,再加水蓋過所有食材烹煮,食材半熟後,再放入金針菇、香菜末拌炒。
5. 待食材熟了,倒入地瓜粉水勾芡,最後試味道略做調整,即可起鍋。
這道簡單又美味的料理就完成了~

Vegetarian soup|Vegan

Come and try this delicious home-cooked dish right away~
◎Prepare ingredients and condiments (serves six people)
▪ 25g dried shiitake mushrooms,
▪ half Chinese cabbage (approximately 500g),
▪ 60g enoki mushrooms,
▪ 90g black fungus,
▪ three coriander sticks,
▪ 60g vegetarian cubes,
▪ 60g carrots,
▪ one tablespoon vegetarian oyster sauce (20ml),
▪ 30ml black vinegar,
▪ 12g sand tea, MSG, salt,
▪ 25g of sugar,
▪ 40g of sweet potato, and white pepper.
◎Vegetarian dishes are easy to make, start with:
1. Soak the dried shiitake mushrooms until soft and shred them; shred the carrots; remove the bottoms of the enoki mushrooms (about 3cm) and cut them in half; cut the black fungus into thin strips; cut the vegetarian diced into thin slices; mince the coriander; cut the Chinese cabbage into large cubes and set aside.
2. Add sweet potato powder to water and mix well to make sweet potato powder water. Set aside.
3. Heat oil in a pan and fry shredded mushrooms. Turn to low heat, add carrots, shredded black fungus, Chinese cabbage, diced vegetarian food, and a little water, stir, and stir-fry until soft.
4. Add oil, black vinegar, tea, monosodium glutamate, salt, sugar, sweet potato powder, and white pepper to taste. Add plain water to cover all the ingredients, and bring to a boil. After the ingredients are half cooked, add enoki mushrooms and minced oysters and mix saute.
5. When the ingredients are cooked, add sweet potato powder and water to thicken. Finally, test the taste and make slight adjustments before serving.
This is a simple and delicious dish~
Special Note:
Add more water to cover all the ingredients if there is not enough soup when thickening
