◎食材及佐料〔Ingredients〕:(3人份)
▪️袖珍菇、鮮香菇、杏鮑菇 各100克
▪️迷你洋芋 6顆
▪️歐式麵包 6片
▪️羅勒、鹽、黑胡椒粒、義式香料、橄欖油 適量
◎烹飪步驟:
【刀工/前處理】
1.袖珍菇撕小塊。
2.鮮香菇切成小塊。
3.杏鮑菇切1公分圓片。
【調理作法】
1.菇類煎熟後,撒上適量鹽、黑胡椒粒、義式香料、羅勒,炒勻備用。
2.迷你洋芋洗淨,冷水淹過,煮約10分鐘熟透,瀝掉水份備用。
3.煮熟洋芋加入橄欖油、黑胡椒粒、鹽,拌勻。
4.烤箱180度預熱,將洋芋放入烤箱中烤約10分鐘。
5.取一盤子,擺上炒好野菇、烤洋芋、麵包即可享用。

【recipe】
Boil potatoes until tender, discard olive oil & seasoning, roast in the oven to enhance flavors. A tasty side dish is ready to be served. Seasoning mushrooms with Italian spices, this stir-fried mushrooms goes incredibly well with roasted potatoes. This exotic Italian brunch is so delicious that as if you’re present in an Italian county town. Quickly follow the chef of Guanyinshan, let’s cook simple vegetarian dishes together!
▪️Oyster mushrooms、Fresh shiitake mushrooms、King oyster mushrooms 100g
▪️Six mini potatoes
▪️Six slices of bread
▪️Basil、Salt、Black pepper、Italian spices、Olive oil , adequate amount
◎Instructions
【Cutting/Prep-Ahead】
1. Tear oyster mushrooms apart into smaller stripes
2. Cut fresh shiitake mushrooms into small pieces.
3. Cut king oyster mushrooms into 1 cm round slices.
【Directions】
1. Stir fried mushrooms, and sprinkle appropriate amount of salt, black pepper, Italian spices, basil, and stir well for later use.
2. Wash mini potatoes, submerge in cold water, cook for about 10 minutes, and drain for later use.
3. Add olive oil, whole black pepper and salt to the tendered potato and mix well.
4. Preheat the oven at 180 degrees, put the potatoes in the oven and roast for about 10 minutes.
5. Take a plate, put on the fried mushrooms, roasted potato, and bread. You’re all set.
【Special Notes】
Basil can be replaced by Thai basil.
