?食材及佐料〔Ingredients〕:(3人份)
▪️豆腐 2塊
▪️芹菜 40克
▪️鴻喜菇、金針菇 各100克
▪️紅蘿蔔絲 50克
▪️豆腐乳 2匙
▪️地瓜粉、糖、胡椒粉、香油、辣椒醬 適量
?烹飪步驟:
【刀工/前處理】
1.將芹菜切末。
【調理作法】
1.取1/3塊豆腐做餡料:
豆腐、芹菜、適量的調味料(豆腐乳、糖、胡椒粉、辣椒醬、香油)拌勻。
2.豆腐橫切分成4等份,一層豆腐一層餡料,總共七層。
3.將做法2.放入電鍋,外鍋一杯水蒸熟。
4.蒸熟後的湯汁,倒起來備用。
5.製作醬汁:將鴻喜菇、紅蘿蔔絲炒香,加入金針菇、將作法4的湯汁倒入鍋煮沸,加上一大匙豆腐乳汁,再用地瓜粉水勾芡。
6.完成後將醬汁淋在蒸好的豆腐上,即可享用。

? In this healthy rice cooker recipe, the high-quality protein-rich tofu is the main character. A special fermented tofu paste in between tofu layers tastes smooth and tender while mushrooms in dressing thick sauce create another nice texture for the dish. It is really healthy and appetizing. Follow the chef of Guanyinshan, let’s cook simple vegetarian dishes together!
?Ingredients : (For 3 people)
▪️Two tofus
▪️Celery 40g
▪️Beech mushrooms、Enoki mushrooms 100g
▪️Carrots 50g
▪️2Tbsp of fermented tofu
▪️Potato powder、Sugar、Pepper、Sesame oil、Chili sauce , adequate amount
?Instructions:
【Cutting/ PREP-Ahead】
1. Mince the celery.
【Cooking Steps】
1.Take 1/3 piece of tofu to make paste: Tofu, celery, appropriate seasonings (fermented tofu, sugar, pepper, chili sauce, sesame oil), mix well.
2. Cut tofu horizontally into 4 equal parts, and place one layer of tofu and another layer of paste to make seven layers in total.
3. Add a cup of water in the outer pot of a rice cooker and then place the millie tofu (In step 2) into a rice cooker and steam.
4. Pour the steamed sauce for later use.
5. Make the sauce: sauté brown beech mushrooms and carrots until fragrant, add enoki mushrooms. Pour the soup in step 4 and bring to a boil. Add a tablespoon of fermented tofu brine, and thicken with sweet potato powder.
6. Pour the sauce in step 5 on the steamed tofu and enjoy.
