今天要教大家『綠竹筍佐烏于子醬』,是道讓人視覺、味覺都享受的料理,清脆鮮甜的綠竹筍淋上香濃醬料,撒上素烏魚子、羅勒葉,營養又低熱量。

?食材及佐料〔Ingredients〕:(10人份)
▪素烏于子 30克
▪綠竹筍 2支
▪素高湯 150cc
▪純素鮮奶油 40克
▪純素奶油 30克
▪薑末、胡椒、羅勒葉 少許
▪油 適量
?烹飪步驟:
【刀工/前處理】
1.綠竹筍川燙熟,去殼切長條三角狀冷卻備用。
2.素烏于子切片。
【調理作法】
1.用少許油及小火將素烏于子香煎,起鍋後搗碎備用。
2.調醬:奶油將薑末炒香並加入素高湯、鮮奶油及胡椒滾沸即可。
3.擺盤:將綠竹筍擺盤淋上醬汁,灑上素烏魚子和羅勒葉。
【特別說明】
1.素烏于子可用切碎。
2.羅勒葉可用巴西里代替。

?The season of Oldham bamboo shoots is coming soon. Oldham bamboo shoots are rich in dietary fiber and protein, and with benefits of burning body fat. Today we’re going to teach you this”Oldham Bamboo Shoots with Mullet Roe Sauce”. The crisp and sweet Oldham bamboo shoots are seasoned with vegetarian mullet roe sauce and garnished with basil leaves, which makes each morsel a joy and nutritious. This dish is a sensational feast. Quickly follow the chef of Guanyinshan, let’s cook simple vegetarian dishes together!
?Ingredients : (For 10 people)
▪Vegetarian mullet roe 30g
▪Two of Oldham bamboo shoot
▪Vegetarian soup 150cc
▪Vegetarian whipping crream 40g
▪Vegan butter 30g
▪Minced ginger、Pepper、Basil , a little
▪Oil , adequate amount
?Cooking steps:
【Cutting/Beforehand Preparation】
1. Blanch Oldham bamboo shoots, and then shelled & cut them into long triangles for later use.
2. Slice vegetarian Mullet roe.
【Cooking】
1. Add a bit of oil and fry sliced vegetarian mullet roe with low fire, and mash it for later use.
2. Making sauce: stir-fry the minced ginger with vegetarian butter and add the vegetable stock, cooking cream and pepper to a boil.
3. Accompaniment & Garnish: Place Oldham bamboo shoots on the plate; top with the sauce; sprinkle with mashed mullet roe and basil leaves.
【Special Notes】
1. Vegetarian mullet roe can be mashed first before frying.
2. Parsley can be used as an alternative to basil leaves.
